The origins of this style go back to the 1830s when monks brewed a table beer for their own consumption. It was enjoyed with dinner and not available to the general public. Extra is hopped with the noble variety of Saaz from the city Zatec (Czech Republic) where hop fields are on the UNESCO world heritage list. Their initial experiments in 50 liter batch brews were unremarkable, and the pair realized that enthusiasm was no substitute for craft or expertise, so they enrolled in a three year course of brewing studies and training at the CTL Institute in Ghent.\u003c\/p\u003e \u003cp\u003eIt proved a wise decision.
