This two barrel-blend of spontaneously fermented wheat ale was brewed on a winter day in January 2022, with unmalted wheat and two-row barley grown on the FP Farm. The wort cooled overnight in our barn’s koelship, exposed to open air and temperatures below 42℉, allowing native yeast and bacteria from the surrounding white wine vineyard to initiate fermentation.\u003c\/p\u003e \u003cp\u003eThe beer was then transferred to French oak wine barrels, where it aged for 26 months before being blended and bottled in August 2025.
