In fact, Cologne (for which Kölsch is named) has a federal law protecting its right to brew this crisp, refreshing beer. Furthermore, the Kölner Brauer-Kooperation (Cologne Brewers’ Guild), which was founded in 1396, mandates certain parameters for its brewing and protects it worldwide.

When brewing Reissdorf Kölsch, top-fermentation lasts for about eight days and is followed by four weeks of cold-conditioning. The result is a satisfying brew which is pale in color with a slightly malty, soft palate. The finish is decidedly dry due to its high attenuation and firm hop character. Reissdorf Kölsch has a cult-like following among beer connoisseurs around the world who consider it a well-preserved secret. 16.9 oz can

Brewery Information:

Founded in 1894 by Heinrich Reissdorf and his wife Gertrud in Cologne, Germany, the Privat-Brauerei Heinrich Reissdorf established itself as the pre-eminent brewery of the classic Kölsch. After Heinrich died in 1901, Gertrud managed the brewery until 1908. The continuance of the company had never been in danger, though, since the couple had five sons: Johann Hubert, Heinrich, Hermann, Friedrich and Carl. In 1917, when the men were fighting in World War I, Friedrich’s wife Katharina managed the brewery. The two had three sons: Heinrich, Hermann-Josef and Karl-Heinz. They led the company through economically difficult times after World War II, when the brewery was 90% destroyed. Today, the brewery continues today into the fourth generation.

//cdn.shopify.com/s/files/1/0990/2797/6477/files/img_014942_57860581-5312-4579-8c4e-0f3b25d81af5.jpg?v=1778150231
