Dieu Du Ciel! Solstice d’ete – Raspberries

The dominant sourness of Solstice d’été is a result of letting the unboiled grain soak. This is further complemented by the addition of whole fruit during fermentation. The result is a lively sour ale where the fruit is allowed to carry through without restraint.
